Appletini Ice Cream Sundae

Now that the holiday season is officially squeezing the kishkas out of my wallet in direct proportion to the swelling of my 4-way-stretch Lululemon Groove pants (I have to taste every cupcake, cookie, brownie and muffin 7 days a week for quality control, just so you know), it’s appropriate that I lull the bummer of all this by focusing on more festive activities such as drinking and eating.

Since appletinis are my long-time favorite liquid and ice cream sundaes are my go-to fix for comfort, I thought I’d ram one into the other, sort of like chocolate having a fortuitious collision with peanut butter all those years ago, and make an indelible feast.

So here is my wicked indulgence that I invite you to make to celebrate yourself. Yes, you, because you deserve it. You’ll worry about the calories next year.

Must Have

4 cups gluten-free oats

1/2 cup grapeseed oil

1/2 cup coconut nectar

1 teaspoon vanilla extract

4 Granny Smith apples, chopped into 1/2 inch pieces

1/4 cup lemon juice

1 pint vanilla coconut milk ice-cream (I use So Delicious brand)

4 oz. vodka

4 oz. apple schnapps

spritz of dairy-free whipped cream

Must Do

Preheat oven to 300°F and line a cookie sheet with parchment paper.

Mix together the oats, grapeseed oil, coconut nectar, and vanilla until the oats are coated evenly.

Pour the lemon juice over the apples and add them to the oat mixture.

Pour the mixture onto the prepared cookie sheet and spread evenly.

Bake for 25- 30 minutes stirring once halfway through.

Take out the sheet and place on a wire rack to cool.

When ready to serve, fill martini glasses halfway with the oat and apple mixture.

Place a scoop of ice cream on top.

Shake together the vodka and schnapps in a martini shaker and pour a little on top of the ice cream scoop.

Place a little more of the oat mixture on top of the ice cream.

Add the dairy-free whipped cream for a dollop of decadence.
